The Chemex filters are much more densely woven than traditional coffee filters. They help to regulate the flow of coffee while removing much of the body and coffee oils. The filter slows down the flow of water passed through it, resulting in a better developed flavor.
Brewing ratios for a Chemex: Strong
One of the wonderful things about the Chemex is your ability to control the brew — this comes through best during the set-up process. It's possible that the Chemex can make the strongest coffee of any non-pressurized coffee maker.
One of the benefits of the Chemex is that direct heat never touches the carafe. It's never “cooked” on a warming plate, which can make the remaining coffee taste less than fresh or even burnt. With a Chemex, I can reheat a cup in the microwave later in the day, and it'll taste like it was just brewed.
Chemex measures cup size on each model as a 5 ounce cup. Therefore, the eight cup model (when full) is 40 ounces. If you're like me, your regular coffee cup is much larger than 5 ounces. ... In other words, if you purchase the three cup model and have a large coffee mug, you'll get one true cup of coffee.
To keep the contents warm, the Chemex coffeemakers can be placed directly over gas heat on your stove. If you have an electric stove, be sure to use a wire metal grid to keep the glass from making direct contact with the elements. You can even boil water in your Chemex; just don't let it boil dry.
The Chemex is easily cleaned. Models with glass handles are dishwasher safe and require nothing more than being run through the dishwasher. Models that have a wooden collar and leather thong must be washed with soap and water by hand.
